Easy Recipes: Cheesy Corn on the Cob

This cheesy corn on the cob recipe is so simple, it's ridiculous! Inspired by a menu picture at a steak restaurant, I knew it'd taste yummy. The picture showed corn on the cob with red and black seasoning oozing with what looked like cheese. It turned out to be butter, but I decided to try to recreate what I thought I saw: corn on the cob with cheese. Enjoy!

How to Make Cheesy Corn on the Cob Recipe



Ingredients:
4 fresh ears of corn
1/2 t. salt
Salt, red pepper, and black pepper to taste
4 slices Havarti cheese
2 T butter, divided

Directions:
1. Shuck the corn, and clear away the silks. In a large pot, add enough water to cover the ears. Remove the corn. Add 1/2 t. salt and 1 T butter. Heat the water to boiling. Add the ears of corn. Boil 6 minutes. Remove the ears and let them cool 5 minutes.  

2. Season the corn with salt, red pepper, and black pepper to taste. Melt 1 T butter. Coat the ears with the melted butter. Top with the Havarti cheese slices, tearing each slice so that the entire length of corn is covered in cheese.

3. Broil the ears on high approx. 2 minutes, or until the cheese browns slightly.

Easy Chicken Avocado Recipe Avacado
Easy Chicken Avocado Recipe.

Ingredients:

1 lb. skinless and boneless chicken* breasts
salt and pepper
1 t. Italian seasoning
1/2 t. basil
1/2 t. garlic powder
2 T. olive oil
2 avocado, peeled and sliced
2 medium tomatoes, sliced
3 mozzarella cheese balls, sliced
*3 T. balsamic glaze


Skillet Avocado Chicken.

Directions:
1.  Place the chicken breasts between layers of plastic wrap.  Pound them to a consistent thickness with the side of a meat tenderizer.
2.  Season each side the chicken breasts with salt and pepper, to taste.
3.  Mix the Italian seasoning, basil and garlic powder in a small bowl.
4.  Coat each side of the chicken with the combined spices.
5.  Heat the oil in a large skillet on medium-high heat. Add the chicken breasts. Cook until the chicken is browned, approx. 5 minutes. Turn over chicken and continue cooking until the inside temperature reaches 160 degrees F, approx. 5 minutes.
6.  Top the chicken with slices of mozzarella cheese, tomato, and avocado. Cover the skillet.  Continue cooking until the cheese melts and chicken reaches 165 degrees F.
7.  Remove the chicken from the skillet and drizzle with balsamic glaze.

Tip:
*  I did not have balsamic glaze. It is fairly easy to make. Add approx. 1/2 c. balsamic vinegar to a small pot. Bring to a simmer. Reduce the heat to low and continue cooking until the vinegar reduces to desired consistency.

How to Make Homemade Baked Chicken Parmesan

Gather the chicken parm ingredients below. You can substitute fresh for a more gourmet feel, but canned and dried are just as good- especially for busy weeknights.

Ingredients:
1 garlic clove
1 T. olive oil
1 15 oz. can crushed tomatoes*
1 8 oz. can tomato sauce
1 t. dried basil
1/2 t. dried oregano
1/2 t. sugar
1/2 t. salt
1/4 t. pepper
1 lb. boneless chicken breasts
approx. 1/4 c. milk
approx. 1/2 c. Italian seasoned bread crumbs
olive oil for pan frying
4-6 oz. sliced Mozzarella cheese
1/4 c. grated Parmesan cheese
Fettuccine noodles

Directions:
1. Make the sauce:  In a large saucepan, heat 1 T. olive oil. Mince the garlic clove and add it to the hot oil. When the garlic begins to sizzle, add tomatoes, tomato sauce, basil, oregano, sugar, salt, and pepper. Simmer until the sauce reaches the desired thickness.  

2. Preheat oven to 350 degrees F.

3. Prepare the chicken:  
a. Put chicken pieces between two pieces of plastic wrap. Pound the chicken until approx. 1/4-in. thick.  
b. Put milk in one shallow dish and bread crumbs in a second dish.  Start with a small amount of dry bread crumbs. Add to it as needed.
c. Dip each chicken breast in the milk, followed by the bread crumbs. Be sure to coat each side.
d. Heat the remaining oil in a large skillet. Add the chicken breasts. Saute until golden brown, turning once.

4. Put a small amount of sauce in the bottom of a 13X9-in. casserole dish*. Place chicken breasts in a single layer in the casserole dish. Cover with sauce. Place a layer of mozzarella cheese slices over chicken and top with parmesan cheese.

5. Bake in preheated oven until cheese is golden, approx. 15 min.

6. Prepare the pasta according to package directions. Serve with the chicken.

How to Make Homemade Dr Pepper® Chicken Tenders

These delicious chicken tenders are ready in just 30 minutes. Serve them up at your next football party with a side of fried zucchini, waffle fries, and a glass of Dr Pepper® or simply have them out as an appetizer. 

1/2 C. Dr Pepper®
1/4 C.  all-purpose flour
egg
tablespoon water
1 C. Panko bread crumbs
Dash of Paprika
5-6 chicken breast tenders
Salt and Pepper to Taste

1. Heat oven to 425°F. Line a cookie sheet with foil, and spray it with cooking spray. (They will stick.)

2. In shallow dish or bowl, marinade chicken tenders in 1/2 C. Dr Pepper®. Toss to coat.

3. In another shallow dish, mix flour, panko, paprika, and salt and pepper with a fork. 



4. In yet another shallow dish, beat egg and 1/4 C. Dr Pepper®.

5. Now, dip chicken into egg/Dr Pepper® mixture, then coat with flour crumb mixture. Place on cookie sheet.

4. Bake 15 to 20 minutes, turning once toward the end, until chicken is no longer pink in center and coating is an orange golden brown. 


Cooking in oven, spoon some more Dr Pepper® over any dry bits of flour.

How to Make Dr Pepper® Chocolate Chip Cupcake Muffins

Ingredients
  • Martha White Chocolate Chip Muffin Mix
  • 1/2 C. Dr Pepper®
  • 1/4 C. Almond Milk


    Follow Package Instructions, but replace milk with Dr Pepper® and Milk measurements listed above.





    Stir until frothy.



    Place Cupcake liners in pan. Fill liners to top. You will need to scoop the chips into the muffin tins. They react with the Dr Pepper® and stay in the bottom of the bowl.



    Bake according to package instructions. Remove from heat. Cool pan on wire baking rack.


    Once cool, add your favorite Cream Cheese frosting. Then, stick on this paper printable mustache.

    We enlisted the kids to help. At first, we grabbed a baking dish and searched for some chicken marinade. After reading the instructions on the Good Table® box, we quickly realized that step wasn't necessary! General Mills has a new product that helps you make restaurant-inspired dinners with ease.

    Good Table® products come in a variety of flavors that provide you with the ingredients to dress up your choice of protein. We chose chicken, because the kids are picky eaters. You can find it at Walmart near the bread crumbs.


    Since the kids are so picky, we tried two varieties. Pictured below are Southwest Tortilla and Parmesan and Herb. The kids chose the parmesan- anything with cheese is a go!

    Let me tell you, this was shockingly easy to do. There is no need to marinade and no messy egg mixture to keep the breading in place. 



    How to Make Easy Gourmet Style Baked Breaded Chicken

    Open the box and grab a pair of scissors. Snip, snip, snip! Open the sauce coating, and pour it into a bowl. Open the breading, and pour it into the bowl! Grab some tongs. Insert chicken into sauce, turn over to coat and then insert into breading bowl.

    The breading sticks to the sauce very well- much better than with bread crumbs and eggs. This is so much easier than your typical fried or baked chicken recipe. So easy, in fact, that the kids did most of the work! The instructions even include pictures.

    Spread them on foil for easy cleanup, pop them in the oven, set the timer, and that's it! You now have time to make a fancy side dish or a yummy dessert.

    Though we currently homeschool, we nominated our old school, Robey Elementary. Robey is a fantastic school that nurtures children and offers many opportunities for gifted students.



    Even though we were moving from the district, my son was still offered the opportunity to attend the gifted program.

    As a preschooler attending their preschool program, they quickly recognized his strengths and often allowed him to work and play at his own pace. In kindergarten, once again his abilities were nurtured. Then, in first and second grade, he was able to study his special interests in more depth. This kept him interested in school, as he was beginning to hate it due to boredom.

    "I already know that." And, he did... We're so thankful the school was paying attention.

    Creative Country: Big Red Barn Chicken Coop Ideas

    Here is a fun idea for a Chicken Coop

    Beware! Chicken Coops they sell at the store are not safe for your chickens. They aren't raccoon, opossum, weasel, or mink proof. 

    I've heard awful stories of raccoons pulling the animals right through the wires and of minks squeezing through and, like a vampire, sucking the blood from every last animal and then lining them up in a row! 

    We had a "friendly" possum and learned the hard way that "opossums sometimes eat sleeping poultry". Did  you get that part, eat? They eat them alive starting with their abdomen. It is very sad. It also ate part of our little girl duck's beak, poor thing. Please don't let this happen to you. The guilt is unbearable.

    A friend of mine had some materials left over after building their barn, so they made a Chicken Coop to match! I am jealous! Don't you think they should market these?
