Butterbeer Soda Recipe

Serves 1

Ingredients:
1/4 c. Butterscotch syrup, divided
Vanilla Ice Cream
Approx. 1c. Cream Soda, chilled
Butterschotch Whipped Cream (recipe follows)

1.  Put 3T. butterscotch syrup into a glass. Add 1 scoop of vanilla ice cream. Mix well with a spoon.
2.  Add 1-2 more scoops of ice cream to the butterscotch mixture.
3.  Carefully pour cream soda down the inside of the glass.
4.  Top with whipped cream. Drizzle with remaining butterscotch syrup.

Make Butterscotch Whipped Cream
Add 2 T. butterscotch syrup and 1/2 c. heavy whipping cream to a mixing bowl. Beat until soft peaks form.

Chocolate Soda Variation
Prepare as above, substituting chocolate syrup for the butterscotch syrup and lemon-lime soda for the cream soda. Top with unflavored whipped cream.

To add to the mix, we created a patriotic trifle with yogurt, frozen fruit juices, and fruit. This is patriotic slushie with fruit and yogurt is a delicious recipe! Especially, with the new flavors of Yoplait® Yogurt.

For this yogurt slushie dessert recipe, we used the Limited edition Yoplait® Rainbow Sherbet Yogurt that we found at Walmart. It makes the perfect seasonal treat for summer snacking and Fourth of July get-togethers. Enjoy!

Silk Cashew Milk is a Dairy free and Non-GMO milk alternative. We are a family with allergies. We aren't lactose intolerant (though my son tells everyone he is), but we are allergic to MILK. When the box arrived at our doorstep, we were surprised to see both sweetened and unsweetened. We ran into the kitchen and tore open the sweetened Silk Cashew Milk.

The Mommy: "Mmm, that's pretty good! I don't know if I'd want it on my cereal though. It'd make it take like cashews."

The Brother: "It's different. I like cashews. I like Silk Almond Milk better, but this is okay."

The Sister: "I'm not trying it!"

The Brother: "It's good!"

The Mommy: "Try just a little sip."

The Sister: "There. I don't like it. See?"


Then, we got busy. We didn't eat cereal or drink milk for a few days.


The Mommy: "We need to try the Unsweetened Silk Cashew Milk."

The Sister: "Go right ahead, I'm not drinking it."

The Brother: "Sure, I'll try it."

The Mommy: "Wow! I like this better than the Sweetened Silk Milk!"

The Brother: "It is better! It still has a cashew-y after taste though. Hey, do we still have those cashews?"

The Sister: "I will never try it."

The Mommy: "This tastes more like real milk. It is creamy like milk. I would like this on my cereal. Yes, we still have cashews."

The Brother: "Yay! I love cashews."


So, you can see, everyone has a differing opinion. You should try it and decide for yourself. I have a little disclaimer. I'm struggling with some medical issues. This past year, I have acquired many food allergies that never existed in the past. I liked the Silk Unsweetened Cashew Milk so much that, against my instincts, I had two cups. Shortly after, I began sneezing, coughing, and tightening in the chest. This is similar to my milk allergy reaction. I don't seem to have a problem with Silk Almond Milk. I put a little on my cereal a few times per week. I would be concerned for anyone with a nut-allergy. Do I have one? The verdict is out, I will be tested next month. Pretty much I am allergic to everything. I just want to share my true experience with you. Surely, if you have a nut-allergy, you wouldn't attempt to drink a milk made from nuts.

On a more positive note, I would LOVE to have a milkshake made with this milk. Some homemade Silk Cashew Milk ice cream, chocolate syrup, cashews... and for me, maybe a Benadryl on the side.

Over at Kitchen Treaty, I found a recipe for this amazing vegan dairy free cashew milkshake. The recipe doesn't call for Silk Cashew Milk, but it would make it so much better! I'm not a health nut; I'd add some chocolate syrup too.

Before the party, we gathered supplies for our craft, snack, and pajama party tent. The kitchen nook worked best, because it has room for a large, family-size tent. We used the walls and bench to construct a tent from one of our favorite blankets. Mommy filled a basket with books, juice packs, popcorn, and flashlights. Then, we created some, super cute edible crafts- with a ghost theme of course. Candy Corn S'mores!

For our Candy Corn S'mores recipe, we used graham crackers, candy corn marshmallows, candy corn, and chocolate chips to make our S'mores. They were the best S'mores we ever had! Messy, but delicious.

While our sleepover snacks were baking in the toaster oven, we started the spooky ghost craft. We used cheesecloth, Styrofoam cups, and buttons to make a Halloween Ghost craft.

After reading the story, Mayhem wanted to make a bat too. So, we cut out a pattern that looks like the bat on the cover of the book. To make our bat you only need scissors, construction paper, and glue. If you want to make an outdoor Halloween decoration, before cutting, cover your paper with Duct Tape in coordinating colors. The duct tape will make a durable Halloween decoration for your door.

While we enjoyed reading stories to each other and making shadow puppets on the walls, we had some surprise guests! They wanted to hear about Splat the Cat, and they wanted to chase the lights from our EVEREADY® Flashlights!

Educational Element for Homeschooling

We wanted to count this experience as school, so we found a free printable story starter and Lesson Plans for, There Was an Old Lady, on Scholastic's website. From the list of lesson plans, we also chose to try the edible estimations. This is a fun math lesson for kids where you compare the things the old lady ate with similar weighing objects around the house or classroom and then calculate the grand total of everything she ate. We had to come up with an item to take for a Teacher Appreciation Week pitch-in luncheon at Chick-a-Bitty and Bug's school. I knew I needed to bring in something that would feed over forty teachers and wouldn't require major refrigerator space. I thought if I could make this in my Mini Muffin Pan ( it makes twenty-four muffins at a time) and with one cake mix, I could make a little over forty-eight muffins!


Make Strawberry Cupcakes in a Mini- Muffin Pan to feed the whole gang.

Ingredients:

  • 1 strawberry cake mix 

If you can't find strawberry cake mix, Pillsbury and Betty Crocker make a white one- just add about one drop of red food coloring. 


  • Add 1 tsp. of strawberry extract


IMO, Strawberry cake mix is prettier, because it makes a pink cake with red speckles, plus you're putting in the white chips = very pretty! 

You can also as fresh strawberries to the white cake mix for a similar effect.

  • 1 tsp. strawberry extract 
  • ½ cup white chocolate chips
  • 1 (3 oz. box) cheesecake pudding mix
  • 16 oz. sour cream
  • ½ cup oil
  • 3 eggs 
  • Garnish: whipped topping and fresh strawberries. 
  • Preheat oven to 325 Degrees
  • Spray your pan lightly 
  • Whisk eggs and pudding mix together.
  • Add remaining ingredients, blend well.

  • Using a medium or large ice cream scoop, (depends on how big you want your mini cakes) put in pan. 

How to infuse cupcakes and cakes.
Infuse cupcakes with a jam filled icing tube.

  • Bake for 10-12 min. Let cool on cooling rack and remove from pan. Repeat until all the batter is used.
  • Once cupcakes are baked, use a frosting tube filled with jam to infuse. It is easy, just insert and squirt! Now, you are a gourmet baker!
Tip:  If there is extra batter for a third round but not enough to fill all cups, fill empty cups with a bit of water so it will not ruin and over bake the empty cups.

After everything is cool, use whipped topping to decorate top of mini-cakes. Add a sliced strawberry to put on top.

You can also frost with cream cheese frosting and drizzle with chocolate syrup as seen below.

Chicago Style Hot Dog Bites

I made this as a light dinner one night and we were all pleasantly surprised. My kids, of course, loved it because it was made with hot dogs. My husband and I looked at the recipe and weren't so sure. This would be great as a snack or an appetizer for a kids party or any kids gathering, plus the kids could have fun helping put it all together.

Ingredients:

2 pkg (12 oz) flaky buttermilk biscuits (Don't Use Grands style biscuits, they are to doughy. I learned this the hard way)
2 tsp poppy seeds (I just omitted them altogether)
3 hot dogs
2 small whole dill pickles or 1/2 cup coarsely chopped(I used dill relish)
1 small onion
2 plum tomatoes or 1 roma
4 oz sharp cheddar cheese shredded
1/4 Cup yellow mustard

Preheat oven to 400.  Pull apart biscuit layers horizontally in half to form 40 biscuits. Arrange biscuits over Large Round Stone or any round pizza pan or you can also use the large bar pan, overlapping as necessary. Sprinkle with poppy seeds and bake 13-15 min or until golden brown.

Meanwhile, cut hot dogs in half lengthwise then crosswise into 1/4 in thick half moons. Place hot dogs into small micro-cooker or any microwave safe bowl, microwave covered on high for 30-45 seconds or until hot.  Coarsely chop pickles and onions using food chopper.  Blot excess moisture from pickles using paper towels.  Seed and dice tomatoes.  Combine pickles, onions and tomatoes in a bowl; mix well and set aside.  

Removing baking stone from oven to cooling rack, top biscuits with hot dogs and cheese. Bake 3-4 min or until cheese is melted.  Remove from oven; top with vegetable mixture and drizzle with mustard.

Monkey Treats: Healthy Crunchy Granola Banana and Chocolate Chips on a Stick Recipe


Monkeys' love them! How to make a healthy banana snack for kids.

We found this fun Monkey Treat or Banana on a stick recipe in an old, kid's cookbook from the 1970's, but they used Mayo as the glue and other yucky stuff. We prefer vanilla yogurt and granola for a healthy snack for kids.

To Make this Banana Snack you will need:


bananas, vanilla yogurt or vanilla pudding, 1/4 c. chopped peanuts or 1/4 chocolate pieces or 1/4 crushed graham crackers, spoon, and wooden popsicle sticks. Makes 2.

Peel a banana and cut it in half.  Put a wooden stick in each banana half. With your spoon, spread yogurt or pudding lightly on banana. Roll the banana in a plate of chopped peanuts, chocolate pieces, graham cracker crumbs or all three for extra 'Yum'!
