Pounding the dough was a big hit. (Pun intended.)
A little more labor intensive than I thought, but so worth it.
In the past, we made easy pretzels with canned dough- Fun to make and tasted o.k. but this recipe tastes like we bought them at the store.

We made the cornucopia by wrapping strips of the processed dough around a greased cake funnel.




We tried sugar and salt variations for the coating.

1 pkg of refrigerated thin crust pizza dough
2 jalapeno peppers (I seeded mine to cut down on the heat factor)
1/2 of a bell pepper (I used red)
1/2 pkg of cream cheese (softened)
4 slices of bacon cooked until crispy
1 C cheddar cheese
1 C corn chips crushed

Preheat oven to 425.  Place dough on cutting board and using a sawing motion make 24 disks; place on large bar pan.  Press to flatten and seal seams; bake for 11-13 min or until golden brown. Remove pan from oven and place on cooling rack.

Meanwhile, slice bacon into 1/4 in pieces; cook til crispy; remove from pan to towel lined plate to drain; drain pan but reserve 1tsp of drippings in pan.  Chop jalapenos with food chopper; finely dice bell pepper.  Add peppers to pan and cook for 2-3 min over medium heat til peppers are tender.

Combine cream cheese, half of cheddar cheese, bacon and peppers in bowl and mix well.  Divide cream cheese mixture evenly over crusts.  Sprinkle with remaining cheese and crushed corn chips. Bake 4-6 min until cheese is melted and crust is golden brown. Remove from oven to cooling rack and move to serving platter.

How to Make Apple Blueberry Salad Recipe


Ingredients:
  2 sweet apples, such as Gala
  1 c. blueberries
  1/2 c. sliced almonds
  2 T crumbled bleu cheese
  6 T plain yogurt
  1 T maple syrup

Directions:
  1.  Toast almonds in a small skillet over medium heat until you smell an almond aroma. Place the almonds in a container to cool.
  2.  Stir together the yogurt, maple syrup and bleu cheese.
  3.  Core and cube the apples.
  4.  Add the blueberries and almonds to the apples. Toss with the yogurt dressing.

To Make the Crust:

12 oz. Refrigerated Sugar Cookie Dough, 3 T Cocoa, 1 T Butter

Mix together above ingredients. Then, grease an 8 in. square baking pan. Pat the dough into the pan. Bake for approx. 15 minutes in a preheated 350 degree oven. Let the crust cool completely.

To Make the Cheesecake Layer:
8 oz. Cream Cheese, 1/2 C. Milk
Let 8 oz. cream cheese come to room temperature. Beat in 1/2 C. powdered sugar. Layer the cheesecake mixture on top of the cooled crust.

To Make the Chocolate Pudding Layer:
1 Package Dark Chocolate Pudding, 1/2 C. Milk
Whisk above ingredients together until thickened. Spread on top of the cheesecake layer.

To Make the White Pudding Layer:
1 Package White Chocolate or Vanilla Pudding, 1/2 C. Milk
Whisk together above ingredients until thickened. Spread on top of chocolate pudding layer.

Top with whipped cream and a strawberry. 


Tip: Chill for 1 hr.

Easy Breakfast Pizza Recipe

Pizza for Breakfast? Heck, yeah!

Do you miss those college day breakfasts of cold pizza? Or was that last week? Either way, this is a fun, easy breakfast pizza recipe for a more traditional breakfast. Just like conventional pizza, you can mix and match toppings as you see fit. We've also included a breakfast pizza sauce recipe. We used turkey ham, mushrooms, and red onions this time because....well, it was what we had. Enjoy!

How to Make Breakfast Pizza with Sauce


Ingredients:
Pizza Crust
1T butter or margarine
3/4 t. salt, divided
1/8 t. pepper
1T flour
1 c. milk, divided
1t. Italian seasoning
8 eggs

Choice of Toppings: Such as mushrooms, onions, peppers, sausage, ham, bacon and 1 c. shredded Mozzarella Cheese

Crust:
Use your favorite pre-made crust, bread dough, or recipe of your choosing. Roll the crust into a 14 inch circle and build up the edges slightly. Bake the crust (375 degrees) at least partially before adding toppings. 

While the crust is rising and/or baking, prepare your sauce and toppings as follows:

Sauce:
Melt 1T butter or margarine in a small pan.
Add 1/4t. salt and 1/8t. pepper and 1T flour.
Mix well and cook 1 minute.
Add 1/2 c. milk and stir constantly over medium heat until thickened.

Eggs:
In a large bowl, beat 8 eggs.
Add 1/2 c.milk.
Season with 1/2 t. salt and 1 t. Italian seasoning.
Lightly grease a skillet with cooking spray and allow the egg mixture to set up on the bottom of the skillet.
Using a spatula, lift and fold the cooked eggs, allowing the uncooked mixture to flow to the bottom of the pan.  
Continue until eggs are completely cooked, but still moist.

Toppings:
Thinly slice vegetables- onions, mushrooms, green or red peppers. Thoroughly cook meat toppings- sausage, bacon, or ham.

Assemble pizza.

Once the crust is baked, but not browned, apply a layer of sauce.  Spoon the scrambled eggs on top of the sauce. Add toppings.  Finally, top with about 1 c. shredded Mozzarella Cheese.

Bake the pizza at 375 degrees for 15 minutes or until the cheese is melted and the crust is browned.

We enlisted the kids to help. At first, we grabbed a baking dish and searched for some chicken marinade. After reading the instructions on the Good Table® box, we quickly realized that step wasn't necessary! General Mills has a new product that helps you make restaurant-inspired dinners with ease.

Good Table® products come in a variety of flavors that provide you with the ingredients to dress up your choice of protein. We chose chicken, because the kids are picky eaters. You can find it at Walmart near the bread crumbs.


Since the kids are so picky, we tried two varieties. Pictured below are Southwest Tortilla and Parmesan and Herb. The kids chose the parmesan- anything with cheese is a go!

Let me tell you, this was shockingly easy to do. There is no need to marinade and no messy egg mixture to keep the breading in place.

Open the box and grab a pair of scissors. Snip, snip, snip! Open the sauce coating, and pour it into a bowl. Open the breading, and pour it into the bowl! Grab some tongs. Insert chicken into sauce, turn over to coat and then insert into breading bowl.

The breading sticks to the sauce very well- much better than with bread crumbs and eggs. This is so much easier than your typical fried or baked chicken recipe. So easy, in fact, that the kids did most of the work! The instructions even include pictures.

Spread them on foil for easy cleanup, pop them in the oven, set the timer, and that's it! You now have time to make a fancy side dish or a yummy dessert.

We made it and it tasted so amazing, but it called for 1 3/4 cup of fresh blackberries, which are often out of season or very costly. Our version of the blackberry pork tenderloin recipe replaces the fresh blackberries with blackberry all-fruit spread and the pork chops with pork tenderloins. How to Make Pan Fried Fish and Chips

Did you catch up a mess of fish? Maybe you just found a great deal at the fish market, er, grocery store. Either way, you'll need an easy recipe for homemade fish and chips. We've got it! In this recipe, Lisa shares how to make pan fried fish and chips at home. Enjoy!

Spring Break! My son had the opportunity to clean his first fish this week. And, I got the opportunity to cook them. Two big firsts for our nature-enjoying, convenience-loving family. This pan fried fish recipe was a hit for the fresh, black crappie. It would be good with your store bought fish, too. The homemade chips round out the meal.

Spring Break Pan Fried Fish and Chips


Ingredients:
Fresh fish
almond flour (other flours may be used but all-purpose gets doughy)
Milk
Italian seasoned bread crumbs
Ground mustard
Salt and pepper
Olive oil for frying
Large potatoes
Parmesan Cheese
Italian Seasoning
Cooking Spray

Chips
1.  Heat oven to 450 degrees F.
*2.  Microwave large potatoes about half on the microwave recommended time.  The potatoes should still be firm.
3.  While potatoes are in the microwave, mix 1/2 c. parmesan cheese and 1 t. Italian seasoning in a large bowl.
4.  After the potatoes have cooled to the touch, cut them into wedges.
5.  Coat the potato wedges with the cheese mixture and transfer to a baking sheet.  Spray with cooking spray.
6.  Bake in preheated oven for 10 minutes.  Turn the potatoes and continue baking another 10 minutes.

Fish:
1.  Prepare 3 shallow dishes as follows:
a.  Mix 1/2 c. almond (or other) flour, 1/2 t. salt, 1/4 t. pepper, and 1/2 t. ground mustard in one shallow dish. (Note: Depending on how much fish you have, you may need to make multiple batches.  Make multiple batches, however, instead of doubling the size of the batches because the breading can get doughy after awhile.)
b.  Add 1/4 c. milk to the second shallow dish.
c.  Add 1/2 c. seasoned break crumbs to the third shallow dish.
2.  Pour enough olive oil into a skillet to cover the bottom.  Apply medium heat.
3.  Coat each fish fillet in the flour mixture, followed by the milk, and finally the bread crumbs.
4.  Fry the fish about 5-10 minutes until golden brown, turning once to cook both sides.  Fish should flake easily.  Add additional oil as needed.​

It is said that harvest can be made after the first frost. One might want to wait for a frost or two to allow the fruit to ripen to a passionate, purply-orange. Keep an eye on the fruit. Don't pick them all at once, just like people, persimmons mature at various ages. Harvesting the perfect persimmon is an art. Rotten persimmons are not pleasant. One year, I picked a cupful at a time and froze them until I had enough for a batch.

A batch of what? That is the perplexing problem with persimmons. A lot goes a little way. Perhaps a simple pudding, chutney, or jam for one. Maybe you'd like a cobbler or a pie?

This year, I am thinking of trying this recipe. At least after all of the work, I can relax with a nice glass of wine in a year or two. After the tedious collecting and preparing of 3 lbs. of persimmon pulp, it might take more than one glass of wine to restore sanity.


PERSIMMON WINE

3 lbs ripe persimmons


2 1/2 lbs finely granulated sugar


1 tbl sp acid blend


1/2 tsp pectic enzyme


7 pts water


1 crushed Campden tablet


1/2 tsp yeast nutrient


1 packet Montrachet, Pasteur Red or Champagne yeast

Wash the persimmons, cut into quarters and mash the seeds out with your hands. Mash the pulp well, put into primary, and add half the sugar, the acid blend, yeast nutrient and crushed Campden tablet. Add water to total one gallon. Stir well to dissolve sugar, cover, and set aside. After 12 hours add pectic enzyme and recover. After another 12 hours, add yeast. Ferment 5-7 days, stirring daily. Strain through nylon sieve. Do not be concerned if a lot of fine pulp gets through; it will precipitate out. Add remaining sugar, stir very well, then transfer to secondary while leaving about three inches headroom. Fit air lock and set aside. Rack every 30 days until wine clears and no additional lees are laid down (4-6 months). Stabilize only if you feel the need to sweeten the wine before bottling. This wine should age in the bottle a year.
