Special Chicken Dinner Recipe
Chateau Chicken is an easy, elegant weeknight dinner.


Ingredients:

2 skinless boneless chicken breasts

Chicken rub:

                    1 t. ground cumin
                    1/2 t. crushed marjoram leaves
                    1/2 t. crushed oregano leaves
                    1/2 t. garlic powder
                    1/2 t. salt
                    1/4 t. pepper

Sauce:      
                    1 T. oil
                    1 1/4 c. chicken broth
                    3/4 c. white wine*
                     2 T. butter
                     1 T. flour
                     1 t. ground cumin
                     1 t. crushed marjoram leaves
                     1/2 t. crushed oregano
                     1/2 t. salt, or to taste
                     1/2 t. pepper
                     3 slices bacon, cooked and crumbled
                     1 large tomato, chopped
                     1/2 c. spinach, frozen or 1 c. spinach, fresh

*If you prefer to cook alcohol-free, substitute 1/3 c. lemon juice.


Directions:  

Preheat oven to 375 degrees F. Combine the ingredients for the chicken rub in a small bowl. Rub onto both sides of the chicken breasts. Bake in preheated oven for 30 minutes.Do not over bake.

In a large skillet, heat the olive oil on medium heat. Carefully add the baked chicken and heat approx. 2 minutes on each side, or until chicken reaches an inside temperature of 165 degrees F.
Remove the chicken and set aside.

Deglaze the skillet with wine (or lemon juice). Add the chicken broth. Bring the mixture just to boiling. Reduce heat and simmer until sauce is reduced to 1 cup.

Combine flour and butter in a small bowl. Gradually add mixture to reduced sauce, stirring constantly. Continue cooking until sauce is slightly thickened. Stir in cumin, marjoram, oregano, salt, and pepper. Add bacon, tomato, and spinach. Cook and stir until tomatoes reach desired consistency. Adjust salt, if necessary.

Top cooked chicken with prepared sauce and then enjoy your wonderful Chateau Chicken Dinner. That was easy!
