Easy Butternut Squash Soup for Fall
It's early autumn. It's often cold and rainy. A warm, hearty soup sounds good, doesn't it? Try this butternut squash soup recipe for an easy weeknight dinner. Thyme and cumin add an earthy element to the dish, while roasting the squash helps bring out its richness. Enjoy!

Butternut Squash Soup Recipe
Ingredients:
1 large butternut squash, cut into 4-8 pieces and seeded
1 T. butter or margarine
1 onion, sliced
3 cloves garlic
3 c. chicken stock
1 c. half and half (I used fat free)
1 chicken bouillon cube
1 t. dried thyme
1/2 t. ground cumin
1 pinch ground allspice
1/2 t. salt
1/4 t. pepper
Sunflower seeds or pine nuts (opt.)
Directions:
Preheat oven to 450 degrees F. Place squash pieces on a baking sheet. Roast for 30-40 minutes at 450 degrees. Squash should be soft. Allow the squash to cool enough to handle. Scoop the squash from the peeling.
Melt the butter in a large pot over medium heat. Cook the onion and garlic in the hot butter about 5 minutes. Add the chicken stock and bouillon cube, and bring to a simmer. While stirring, add the half and half gradually. Add the squash. Season with thyme, cumin, allspice, salt, and pepper. Remove from heat.
Pour the soup into a blender in batches, filling the pitch no more than half way with each batch. Hold the lid on carefully, using a pot holder. Puree the soup until smooth. Pour each batch into a serving bowl and adjust seasoning, if necessary. Top with sunflower seeds or pine nuts, if desired.
