To make the Mexican Cornbread Casserole, you will need:


Ingredients:
For cornbread:
1/2 c. cornmeal
2/3 c. flour
3 T. sugar
1 T. baking powder
1/4. t. salt
3 T. cooking or olive oil
1/2 c. milk
1 egg
1 jalapeno pepper, seeded and diced
1 c. frozen corn, thawed or 1 c. canned corn, drained

For filling:  
1 lb. ground beef or ground turkey
1 t. cumin
1 t. chili powder
1/4 t. salt
1/4 t. pepper

For sauce:  
1/4 c. oil
2 T. flour
2 T. chili powder
8 oz. tomato sauce
1/2-1 c. water
1 t. cumin
1 t. garlic powder
1 t. onion powder
1/2 T. brown sugar
1/4 t. salt
1/4 t. pepper
hot sauce to taste (opt.)

Topping: 
1 c. shredded sharp cheddar cheese
1 c. shredded Monterrey Jack cheese
Taco sauce



How to Make Cornbread Mexican Casserole



How to Make Cornbread Mexican Casserole Directions:

1.Preheat oven to 400 degrees F.  Grease a 9 x 13" baking pan.

2.Prepare cornbread. Whisk together the dry ingredients in a medium bowl. Add oil and mix  until crumbly. Whisk in milk and egg. Stir in jalapeno and corn. Pour into prepared pan. Bake 20-25 minutes or until set.

3.While cornbread is baking, brown meat in a skillet over medium heat. Drain, if necessary. Stir in spices and mix well. Set aside.

4.Prepare the sauce. Add all ingredients to a small cooking pot. Mix well. Heat gently, with occasional stirring. Add additional water if necessary.

5.Once cornbread is done, reduce oven temperature to 350 degrees F. Pour prepared sauce over the bread. Run a knife through the sauce and bread in a crisscross pattern to allow the sauce the seep into the bread. Top with filling and cheeses. Cover with aluminum foil. Bake 20 minutes. Remove foil and continue baking until cheese is browned, 5-10 minutes.

6. Let cool 5 minutes. Serve with taco sauce, if desired.
