Make a gluten free chocolate cheesecake with a Kbosh dessert crust.


So, all you really need is a bag of chocolate chips, a Kbosh Chocolate Zucchini Crust, and the Jell-O Cheesecake mix. Make the cheesecake according to package instructions.




Next, remove your Kbosh Crust from the freezer and place it in the microwave for 40 seconds. After your cheesecake mix sets, spread it on the chocolate veggie dessert crust.

Sprinkle on chocolate chips.

No crust, gluten free cheesecake roll.
Carefully, roll it into a Swiss Roll and then slice in 1" pinwheels to serve.

Steak
4 steaks, 1/2 lb. each
1 T olive oil
2 T butter

Spice Blend 
1/2 T cardamom
1/2 T rosemary
1 t salt
1/4 t pepper
1/8 t ginger
1/8 t allspice
1/8 t nutmeg
1/4 t garlic powder

1/2 c red wine

Instructions:
1.  Prepare spice blend in a small bowl and set aside. 
2.  Rub steaks liberally with spice blend on both sides. Allow meat to sit for 10 minutes.
3.  Melt olive oil and butter in a skillet over medium-high heat.
4.  Sear steaks in oil for 1-2 minutes. Turn over the meat and sear 1-2 minutes more.
5.  Add red wine. Reduce heat and cover the skillet. Cook the meat until desired doneness.
6.  Remove steaks and cover with foil. Continue to heat skillet contents until the sauce has thickened to desired consistency.

Potatoes
1 1/2 lb petite medley potatoes
2 T olive oil
1 T Herbs de Provence 
salt and pepper to taste

Instructions:
1.  Preheat oven to 400 degrees F. 
2.  Add oil and potatoes to a baking dish. Cover with Herbs de Provence, salt, and pepper.
3.  Bake in preheated oven for 30 minutes, or until tender.
4.  Adjust seasoning to taste.

How to Make Beer Cheese Recipe


Ingredients:
2T butter
2T flour
1/4 t salt
1 c beer
1/2 c milk
1/2 t ground mustard
1/2 t garlic powder
1/2 t paprika
1/4 t pepper
2 - 2 1/2 c sharp cheddar cheese, shredded
Hot sauce to taste (optional)

Directions:
Melt butter in a saucepan over medium heat. Add flour. Whisk, while heating, until mixture is golden brown, 1-2 min. While continuing to whisk, gradually add the beer. Cook, with stirring, until mixture partially thickens. Add milk; continue to whisk until mixture reaches desired consistency. Remove from heat. Stir in mustard, garlic powder, pepper and cheese. Stir until cheese has melted. Adjust seasonings as desired.

Ingredients:
1 1/2 c. lukewarm water
1 package active dry yeast
1 t salt
1 T brown sugar
1/4 c butter, melted
4 c flour
8 c boiling water
1/2 c baking soda
1 egg, beaten and diluted with 1 t water

Directions:
Dissolve yeast, salt, and sugar in warm water. Allow the mixture to sit until the yeast begins to foam or bubble. Add the melted butter, followed by the flour, 1 c at a time. The dough should be workable and not sticky. Knead the dough on a floured surface for several minutes. Place the dough in a greased bowl,  cover with plastic wrap, and allow to rise in a warm place for about an hour or until doubled in size.

While the dough is rising, boil water and add the baking soda. Stir until dissolved. The baking soda bath with be used to give the pretzel a puffy dough with a golden and shiny crust.  You should also assemble a few handy tools:  a tape measure, a large flat spatula, your baking sheet, and parchment paper. The parchment paper is not essential, but it will make the pretzel much easier to remove from the baking sheet.

Divide the risen dough into 10 equal pieces. Roll each into a 20 inch rope. To form the pretzel shape, bend the rope into a "smile" shape. Cross the ends slightly. Grab the cross and fold it towards you, bringing it down to meet the front loop of the pretzel.

Preheat the oven to 400 degrees F. Using your large spatula, place each pretzel individually in the baking soda bath. Allow it to sit in the bath 30 seconds to 1 minute, making sure the top gets wet as well. Carefully remove the pretzel with your spatula and place on the baking sheet. Once the sheet is full, bake for 10-12 minutes. Repeat as needed until all pretzels are baked.

How to Make Cheesy Corn on the Cob Recipe



Ingredients:
4 fresh ears of corn
1/2 t. salt
Salt, red pepper, and black pepper to taste
4 slices Havarti cheese
2 T butter, divided

Directions:
1. Shuck the corn, and clear away the silks. In a large pot, add enough water to cover the ears. Remove the corn. Add 1/2 t. salt and 1 T butter. Heat the water to boiling. Add the ears of corn. Boil 6 minutes. Remove the ears and let them cool 5 minutes.  

2. Season the corn with salt, red pepper, and black pepper to taste. Melt 1 T butter. Coat the ears with the melted butter. Top with the Havarti cheese slices, tearing each slice so that the entire length of corn is covered in cheese.

3. Broil the ears on high approx. 2 minutes, or until the cheese browns slightly.

How to Make Apple Blueberry Salad Recipe


Ingredients:
  2 sweet apples, such as Gala
  1 c. blueberries
  1/2 c. sliced almonds
  2 T crumbled bleu cheese
  6 T plain yogurt
  1 T maple syrup

Directions:
  1.  Toast almonds in a small skillet over medium heat until you smell an almond aroma. Place the almonds in a container to cool.
  2.  Stir together the yogurt, maple syrup and bleu cheese.
  3.  Core and cube the apples.
  4.  Add the blueberries and almonds to the apples. Toss with the yogurt dressing.

Baklava is a traditional Middle Eastern dessert made from layers of phyllo dough and chopped nuts. It's a lot of work and can be quite costly, depending on the type of nuts chosen. This easy mock Baklava recipe allows you to make a baklava-inspired dessert more easily using inexpensive ingredients. If peanut allergies prohibit the use of peanut butter, other nut butters can be substituted. Enjoy!

Baklava Ingredients

   Syrup
       1/2 c. sugar
       1/4 c. honey
       1/2 c. water
       1 T lemon juice
       1 cinnamon stick
       2 whole cloves
       1/2 t vanilla

  Filling
       1/4 c. crunchy peanut butter
       1/4 c. butter
       1/4 c. chopped peanuts (opt.)
       1 t. ground cinnamon

1 carton flaky biscuits

Easy Peanut Butter Baklava Recipe.

1.  Bake biscuits at 350 degrees F until no longer doughy but not golden brown.  If the tops get hard, you can just discard the top layer later.  Allow the biscuits to cool.  Leave the oven hot.
2.  While the biscuits are baking, start to prepare the syrup:
      a.  Combine all ingredients in a small saucepan.
      b.  Turn the stove to medium.  Stir until the sugar dissolves.
      c.  Continue to heat with occasional stirring until the syrup reaches 225 degrees F, or until the syrup thickens.
      d.  Remove the syrup from the heat.
3.  Prepare the filling:
      a.  Melt the butter in a small bowl in a microwave at low power.
      b.  Stir in the peanut butter, cinnamon, and extra peanuts, if desired.
4.  Prepare the baklava:
      a. Lightly grease a small baking dish.  I used a 6" x 6" square dish.
      b.  Peel about half of the biscuits into layers.  Cut them in half if using a square dish.
      c.  Put a layer of biscuits in the bottom of the pan.  Be sure to fill up the edges of the pan so the syrup doesn't pool at the edges later.
      d.  Spread a thin layer of filling on top of the biscuits.
      e.  Continue to alternate biscuit layers and filling until the filling is consumed, layering more biscuits if needed.  End with a layer of biscuits.  I did not use the whole container.
      f.  Pour the syrup on the baklava.
5.   Bake in 350 degrees F oven for 10 minutes.
6.  Allow the baklava to cool completely.  ut the baklava into desired shapes.

The Voice of Play is an education and advocacy initiative of the non-profit membership association, IPEMA, formed to educate and promote the benefits of children’s free outdoor play and playgrounds. They encourage the scientifically proven physical, social, emotional, and cognitive benefits of play.

Outdoor play is free! Once a week, we visit a different local park and have unstructured play dates with a local homeschool group.

We are fortunate in that we have been able to live our dream life on a beautifully wooded, five-acre property. Everyday, we go for a walk, visit the fish and ducks on our pond, take a paddle boat ride, check out the creatures of the creek, and just play in the yard.

The best part about fall, of course, is the changing leaves. What fun to scoop some up and let them flow through the air! Rake up a pile and jump. It is simple. It is sensory. And, it couldn't be more fun if it cost money.

My family's favorite leftovers are Thanksgiving Turkey turned into a cranberry sandwich with mayo, salt, and pepper. They prefer that to the fancy Thanksgiving feast. So, of course, we decided to make a twist and switch out the turkey for pork. With Smithfield® Marinated Pork, the good news is we don't have to wait for leftovers!

Easy Slow Cooker Pork Tenderloin Recipe


Ingredients:

  • Smithfield® Marinated Pork, Garlic
  • 2 Boxes Corn Muffin Mix
  • 2 Eggs (We use Duck Eggs)
  • Milk or Almond Milk
  • Green Beans
  • Sweet Potato Tater Tots (found at Kroger)
  • Canned Cranberry Sauce
  • Almonds or Walnuts

Open Faced Cranberry Pork Sandwiches

  • Spray your slow cooker with Canola Oil, add 1/2 C. water, a pinch of ground cloves, and a pinch of nutmeg. If you want, you can also add a dash of cinnamon. Place the pork in the slow cooker on high heat, turning occassionally. Cook until browned and 150 degrees in the center. Time varies with each slow cooker's settings. 
  • While the pork tenderloin is cooking, prep corn muffin mix, and bake according to package instructions. We added 1/4 C. ground flax to our batter and then placed it in a loaf pan. You'll need 2 boxes to fill the loaf pan.
  • The Sweet Potato Tater Tots only take about 20 minutes to cook, and cook nicely in a toaster oven.
  • While everything is cooking, you'e got some time for yourself. Ha! You can do the dishes and sweep the kitchen floor. When everything is done cooking you can sit down and enjoy the meal with your family.
  • When the Pork is done, remove from crock pot and allow to rest on a cutting board for 5-8 minutes before cutting it into 1/2" slices.
  • While the pork is cooling, remove the corn muffin "bread" from the pan and slice it into 1/2" slices.
  • Open the can of Cranberry Sauce and slice it thinly (up to 1/2").
  • Lay the pork slice atop the corn muffin, and place the cranberry slice on top to form an open faced cranberry pork sandwich. Yum!
