  • Mix together lemon juice and milk.

  • Stir together the dry ingredients: flour, sugar, salt, baking powder, and baking soda.
  • Beat the cream cheese until it is smooth. Small chunks will remain.  
  • Add egg and milk mixture. and blend.
  • Gradually add dry ingredients with minimal mixing.  
  • Stir in strawberries.  
  • If the batter is too thick, and a little more milk.
  • Grease a skillet or pancake griddle and heat to medium-high on the stove. 
  • Cook until golden brown.  
  • Flip strawberry cheesecake pancakes, and repeat on the other side.
  • Dress up these cheesecake pancakes with sliced strawberries, whipped cream, or strawberry syrup.
