Chocolate Chip Cheesecake with Gluten Free Chocolate Crust


Has there ever been an easier way to make a delicious dessert? Absolutely not! If you're gluten free or keto, or you just love food in general, you have to try these gluten free veggie crusts by Kbosh! They make these gluten free crusts for pizzas and dinner food, and they also make dessert crusts too! It's the craziest thing, we started with their gluten free chocolate zucchini crust and got creative. Scroll down for our easy, gluten free, chocolate chip cheesecake recipe.

Easy Cheesecake Recipe Chocolate Chip Gluten Free Crust


Are you on a gluten free diet? Do you do all things Keto? These veggie crusts from Kbosh work as tortillas, crackers, pasta, pie crusts, pizza crusts, and so much more. You'll never know you're eating veggies. The kids loved this simple cheesecake roll. It makes a great after school snack, and the kids can make it on their own!




How to Make Gluten Free Crustless Cheesecake Recipe


Start with an easy, no bake cheesecake mix or get fancy and make your own cheesecake filling from scratch. It doesn't matter, it's all delicious! We used a Jell-O, No-Bake Cheesecake in a box. Ditch the graham crackers, you don't need them and they're full of gluten and extra sugar. Yes, there's sugar in the cheesecake mix. Shh...

Make a gluten free chocolate cheesecake with a Kbosh dessert crust.


So, all you really need is a bag of chocolate chips, a Kbosh Chocolate Zucchini Crust, and the Jell-O Cheesecake mix. Make the cheesecake according to package instructions.




Next, remove your Kbosh Crust from the freezer and place it in the microwave for 40 seconds. After your cheesecake mix sets, spread it on the chocolate veggie dessert crust.

Sprinkle on chocolate chips.

No crust, gluten free cheesecake roll.
Carefully, roll it into a Swiss Roll and then slice in 1" pinwheels to serve.

Seriously, that's all there is to it. Imagine how great this gluten free chocolate chip cheesecake will be when you add strawberries and whip cream on top! Did someone say, time to eat?

How to Make Homemade Dr Pepper® Chicken Tenders

These delicious chicken tenders are ready in just 30 minutes. Serve them up at your next football party with a side of fried zucchini, waffle fries, and a glass of Dr Pepper® or simply have them out as an appetizer. 

1/2 C. Dr Pepper®
1/4 C.  all-purpose flour
egg
tablespoon water
1 C. Panko bread crumbs
Dash of Paprika
5-6 chicken breast tenders
Salt and Pepper to Taste

1. Heat oven to 425°F. Line a cookie sheet with foil, and spray it with cooking spray. (They will stick.)

2. In shallow dish or bowl, marinade chicken tenders in 1/2 C. Dr Pepper®. Toss to coat.

3. In another shallow dish, mix flour, panko, paprika, and salt and pepper with a fork. 



4. In yet another shallow dish, beat egg and 1/4 C. Dr Pepper®.

5. Now, dip chicken into egg/Dr Pepper® mixture, then coat with flour crumb mixture. Place on cookie sheet.

4. Bake 15 to 20 minutes, turning once toward the end, until chicken is no longer pink in center and coating is an orange golden brown. 


Cooking in oven, spoon some more Dr Pepper® over any dry bits of flour.

I mustache you a question. Do you like Dr Pepper®? We love it! No college football party (think homegating) is complete without Dr Pepper®and chocolate. Every party needs some chocolate! So, after your baked, chicken tenders, splurge with some fun, mustache cupcake muffins.

How to Make Dr Pepper® Chocolate Chip Cupcake Muffins

Ingredients
  • Martha White Chocolate Chip Muffin Mix
  • 1/2 C. Dr Pepper®
  • 1/4 C. Almond Milk


    Follow Package Instructions, but replace milk with Dr Pepper® and Milk measurements listed above.





    Stir until frothy.



    Place Cupcake liners in pan. Fill liners to top. You will need to scoop the chips into the muffin tins. They react with the Dr Pepper® and stay in the bottom of the bowl.



    Bake according to package instructions. Remove from heat. Cool pan on wire baking rack.


    Once cool, add your favorite Cream Cheese frosting. Then, stick on this paper printable mustache.

    Chocolate, Flowers, or Teddy Bears? My Postpartum Depression Pick Me Up

    A few weeks after my first child was born, long after everyone else had gone back to their daily routines, I was left alone with fatigue and a mild-case of postpartum depression (post natal), one giant, smelly dog, two cats, one bird, and a bacteria infested exotic frog.  Oh... and a newborn baby, let's not forget the baby.  Everyone of those little lives needed something from me, and I needed sleep.

    I didn't have enough energy to spread the love, clean the pet messes, and change the baby.  I was simply overcome by Bleh.  I knew I needed to be strong for the baby but the monotony of being alone with all of these creatures in a messy house for eight hours everyday had taken its toll.

    One day, the doorbell rang.  Begrudgingly, I threw on my best hospital, maternity robe, slid on my fuzzy, pink slippers, threw the baby on my hip, and shuffled to the door. Standing on tippy toes, I snuck a peek through the peep hole. A bright-eyed, delivery girl with a broad smile peered over a huge arrangement of flowers.

    With both hands wrapped around baby, I struggled to free one to open the door. Her contagious smile and bubbly personality brightened my grumpy, hermit-loving mood.  I became giddy as I signed for the flowers. The presentation was unique. Flowers were displayed in an earthenware container reminding me of the ancient ruins. 

    I plopped my son into a baby bouncer and quickly cleared a place in the center of the mantle, out of reach from babies, birds, curious cats, and a dog who would eat anything. Then, I dropped to the couch and opened the card.  

    "Thought you might need a pick me up about now."

    Of course, I bawled like a little baby (remember I was postpartum). How did they know?  I barely knew the sender at the time - my father-in-law and step mother-in-law who live out of the country.

    The special delivery came at the perfect time giving me a little pick-me-up to press on for the next few weeks.   Nothing is more heart-warming than knowing someone is thinking about you in your darkest moments.  

    Why not surprise someone who is going through a rough patch.  

    Seven years later, after a fall that rivaled Humpty Dumpty, the patched container sits on my mantle, looking more than ever like ancient ruins, holding my own arrangement of silks and reminding me of that special moment.
