Easy Weeknight Dinner: BLT Mac and Cheese

We loved this Family Style BLT Mac and Cheese Recipe* including the kids, who normally don't like any mac and cheese unless it comes out of a box. Want to make this a well rounded dinner? Add some cooked chicken to it!
How to Make BLT Mac and Cheese
5 C. of Water
10 slices of Turkey Bacon
4 oz. White Sharp Cheddar Cheese
1 oz, Parmesan Cheese
4 oz. of Cream Cheese
1 lb. Rotini Pasta
1 tsp. of Salt
1/2 tsp. of Pepper
5 Green Onions
3 lg. Roma Tomatoes
Bring water to a boil in a 8 Qt. stockpot.
Meanwhile, slice bacon crosswise into thin strips; place in skillet and cook til crisp. Remove bacon and drain on a paper towel.
As the bacon cooks add Rotini Pasta, cream cheese, and other cheeses to pot of boiling water. Cover and simmer vigorously for 5 min. stirring occasionally.
Cook's Tip: When you add the cheeses at the same time, they get stuck to the bottom of the pot, you have to constantly stir. Maybe wait until pasta is nearly done to add the cheese.
As pasta mixture cooks, dice green onions, and then stir into pasta mixture.
Cook uncovered 5-7 minutes or until pasta is cooked to desired tenderness and sauce is thickened, stirring occasionally.
Meanwhile, cut tomatoes in half lengthwise remove cores. Dice tomatoes; reserve 1/4 C. for garnish.
Remove stockpot from heat; stir in remaining tomatoes and half of the bacon. Spoon pasta mixture into a serving bowl and garnish with reserved tomatoes and bacon.

Here is what I made for dinner over the weekend at the request of my 9 yr. old daughter. I truly believe, as she flipped through the cookbook and saw this, she thought it was cheese. lol.
Either way, this turned out to be a HUGE hit with the entire family even with my meat loving husband who already had a local pizza place on speed dial as a Plan B back up if he didn't like it. :D
Tofu Parmigiana with Fire Roasted Tomatoes Recipes
I doubled this recipe as the original just made 4 servings.1 pkg of extra firm tofu (14oz), drained
3/4 tsp salt divided
1/2 tsp ground black pepper, divided
1 small onion
1 can (14.5 oz) Fire Roasted Tomatoes ( I used chipotle style tomatoes instead)
2 garlic cloves, pressed
2 Tbsp parmesan cheese
1/2 C. Panko bread crumbs (I used italian style bread crumbs because that is what I had on hand)
1tsp Italian seasoning
1 egg
2 Tbsp olive oil, divided
1/4 C. mozzarella cheese
1/4 C lightly packed fresh basil leaves (I omitted this because the family doesn't care for it)
Extract Moisture from Tofu: Pat tofu dry with paper towels, removing as moisture as possible. Slice tofu horizontally into eight (1/2 inch thick) slices. Season tofu with 1/2 tsp of the salt and 1/4 tsp of the pepper.
Heat Sauce and Coat Tofu: Finely chop onion. Combine onion, tomatoes, pressed garlic, remaining salt and pepper in Small Micro-Cooker. Microwave for 6 min or til heated through. Combine parmesan cheese, bread crumbs and seasoning on a plate, lightly beat egg and put that on a plate, dip each slice of tofu into egg mixture and then into breadcrumbs, coating generously.
Cook Tofu and serve: Add 1 tbsp of olive oil to 12 in skillet; heat over medium heat 1-3 min or until shimmering. Add 4 slices of tofu to pan and cook 1-2 min or until golden brown. Turn tofu over; top with half of the mozzarella cheese and cook for 1-2 min or until golden brown; remove from pan; repeat with remaining oil, tofu and mozzarella cheese. Thinly slice basil. Serve tofu on top of the sauce and basil sprinkled on tofu.

Rainbow Fish to the Rescue is a perfect story compliment.
Then using a sparkly piece of foam, I cut out a scale and taped
it to "its" shirt for Tag.
It took the little one a few minutes to catch on to the game of
tag. (Some didn't want anything to do with the scale.) But it is
so much fun watching as they learn the game and start running
after each other.
Tip: Miss Lora preferred the gel to the shampoo. It is thicker
and looks more like real ocean water but the little ones loved
the bubbles.
Moral: It's not about making the perfect craft, it is
all about the process and the fun of experimenting!

Try this Vegetarian Lasagna Recipe with Basil and Zucchini
Angie's at it again with this Vegetarian Lasagna Recipe with Basil, Zucchini, and Winter Squash. This is a great way to use up that leftover summer zucchini or make a dish with the flavors of Fall. Enjoy!
Vegetarian Squash Lasagna with Fresh Basil
9 uncooked lasagna noodles2 C of fontina cheese (or any cheese of your choice)
1/4 C of parmesan cheese
2 medium zucchini
2 C. loosely packed fresh basil leaves
1 whole nutmeg grated (or 1tsp of ground nutmeg)
3 T of olive oil
1/2 C of all purpose flour
3 C of milk divided
1 1/4 tsp of salt
1/2 tsp of pepper
2 pkgs of frozen cooked winter squash, thawed (or 4 C fresh butternut squash cooked and then mashed)
freshly diced tomatoes are optional
Preheat oven to 400. Cook noodles to package directions, omitting the salt and oil. Drain and set aside. Meanwhile combine cheeses and set aside. Slice zucchini on #3 setting using the simple slicer and set aside. Chop basil and grate nutmeg to equal 1/2t or use 1tsp of ground nutmeg.
Sauce: Heat oil in 4qt casserole over medium heat 1 minute. Add flour: whisk until completely incorporated. Gradually add 1 cup of milk, whisking constantly until smooth. Add remaining milk, nutmeg, salt and pepper, whisking constantly. Bring mixture to a simmer. Reduce heat to medium-low; cook 3-4 minutes or until thickened, whisking frequently. Add squash and basil; bring to a simmer. Remove casserole from heat.
Assembly: Spread 1 cup of sauce over bottom of Rectangle Baking Pan. Top with 3 noodles. Spread 1 1/4 C of sauce over noodles; top with half of the zucchini and about a 1/4 C of cheese mixture. Repeat layers one time, starting with noodles. Top with remaining noodles, sauce and cheese mixture. Cover pan with foil; bake 25 minutes; carefully remove foil and continue baking uncovered, 15-17 minutes or until cheese begins to brown and center is hot. Remove pan from oven and let stand uncovered for 20 min. Top with tomatoes, if desired.

Okay, he's not a recycled pumpkin just a leftover- "Make a Snowman Jack-o-lantern". Jake likes to keep his pumpkin in the house to protect it from would be smashers. He's been doing this since he was one. As long as no one uses them as a kickball or a chair, they last until spring, at which time we toss it in the garden and pray for pumpkin babies. I love using my Buffalo Rub for nighttime snacking. I am looking for something with a little heat, and I also like using my Smoky Applewood Rub.
All you need is the following:
1 lunch size brown paper bag
1/4 C. popcorn kernels
After putting the popcorn in the bag fold over the bag several times and lay bag flat in microwave and set microwave for between 2 to 3 min. (you will just need to adjust to your microwave, it takes mine about 2 1/2 min.) then when it has finished popping, season to taste.

Sensory Play is a great way to help preschoolers learn. It also helps with disorders of the Autism spectrum when the child is allowed to explore the subject matter on their own without being pushed. This activity is messy, squishy, fun, and even edible! Enjoy!

How to Make Spaghetti for Sensory Paint Play
- Cook up a batch of Spaghetti
- Strain it and pat it dry
- Mix some Edible Paint (Vanilla Pudding Paint with Gel food coloring works best with the Noodles but you can also try kool-aid paint and milk paint for other projects.)
- Prepare to get Messy!
- Swirl the Spaghetti in the paint, then onto your paper.
Next, I gave each child a spaghetti noodle to study. Then, we stood up pretending we were squigly spaghetti noodles. Oops, spaghetti can't stand up, so we fell to the floor and squirmed like worms. We finished up with a game of Duck, Duck, Goose but why not try Worm, Worm, Catepillar?
Painting was a huge success. The sticky spaghetti is so fun, enjoy!

Here is a great how to make chicken salad recipe that has instructions for making a bread bowl, but you can substitute a loaf of Hawaiian Bread if you are short on time.Angie's Recipes
How to Make a Bread Bowl Chicken Salad |
Chicken Salad Recipe in a Bread Bowl
2 loaves frozen bread dough1 lb of boneless, skinless chicken breast
2 ribs of celery
1 onion
1 C. Light Mayo
salt and pepper
1 glove of garlic
1 C. of grapes
1/2 C. pecans (optional)
1 apple (peeled,cored and quartered)
1 tsp. Dill Seasoning
1 oz of Parmesan cheese
Crackers or bread slices of choice
How to Make a Bread Bowl:
Spray food storage bag with non stick spray. Place frozen bread in bag and refrigerate the night before. Roll dough into a circle. Using a baking bowl, spray outside of bowl with non stick cooking spray then place dough on outside of bowl. Bake in a 350 oven til bread is done and slightly brown. Cool then release bread and place in a serving dish. Or just use Hawaiian Bread and cut off top of bread and hollow out the center.Place salted chicken in the Deep Covered Baker and microwave until chicken is done. Cool chicken and quarter it. Place celery, onion, garlic,chicken and pecans in Manual Food Processor and chop the ingredients. Place contents in a batter bowl. Put grapes and apple into the Manual Food Processor and chop and then add to the chicken mixture. Add dill, cheese and mayo to the mixture. Mix until well blended. Place mixture in bread bowl and serve with crackers or toasted bread of your choice.

Meet Billy the Exterminator at World of Wheels
Who is Billy the Exterminator? This guy. The kids were huge fans! Scroll down to see an episode and to find out, what happened to Billy the Exterminator? Looking for things to do in Indiana?
Indy (Indianapolis, Indiana)is known for the Indianapolis 500 and other motor racing events. Indy also hosts a huge World of Wheels event every year.

We waited in line with an unhappy Jake for three hours. Billy was delayed. Not so sure he was worth the wait. We paid $45 to get into the World of Wheels, $5 to Park, and $5 for the photo. (Amanda was free.) Kids faces, priceless.
Billy is tiny, I felt like I towered over him. The kids were overwhelmed, Mommy had to prompt them to speak. Amanda had a question.
Billy: "Sweetie, you had a question for me? Go ahead Hon, ask it."
Amanda: "How did your hair get black? You have blonde hair."
Billy: (Laughing) "Aw... some Girl Scouts jumped me and dyed my hair! Can you believe that?"
Jake had already jumped off stage relieved he could go home and play video games, ironic, since this was his surprise.
Amanda covered her mouth in mock shock and laughed. "Mommy, did you hear what he said?"
She's a star struck, boy chaser. Next time, we better wait in line to see Justin Bieber.
Make this Easy Weeknight Dinner Grilled Chicken Salad Recipe

Quick Easy Weeknight Dinner Grilled Chicken Salad Recipe. |
How to Make Grilled Chicken Salad
Salad and Chicken:
8 oz uncooked pasta of choice
1tsp Olive Oil4 boneless chicken breasts (4 to 6 oz each)
2 T of Greek Rub
1 seedless cucumber
1/2 of a small red onion
Dressing:
1 C Greek yogurt
1/4 C mayo
2 garlic gloves, pressed
2T lemon juice
1/2 tsp salt
1/2 tsp black pepper
Pampered Chef Square Grill Pan. |
Cook pasta according to directions, drain and run under cold water 'til cool. Meanwhile, heat Square Grill Pan* over medium-high heat for 5 min. Then, brush with oil. Season chicken with rub, cook for 3-5 min or until grill marks appear. Turn chicken over and cook 3-5 min or until center of chicken is no longer pink. Remove from pan and cool 5 min., then thinly slice.
Meanwhile combine dressing ingredients and mix til smooth. Set aside 1/2 C of dressing. Add pasta to remaining dressing in bowl and toss.
Cut cucumber into julienne strips using the Julienne Peeler. Thinly slice onion. Divide cucumber among plates, top with pasta, onion and chicken. Then drizzle remaining dressing over top.
Makes 4 servings.

The requirements for his classroom Valentine mailbox called for a shoebox. Mommy's idea of using a 2-Liter bottle was extremely unsettling for Jake, but he thought the end result was A-W-E-S-O-M-E!

Sure, there was a little crying and a lot of pouting as he made his point. Apparently, the teacher's flyer had made it clear the project was to be no smaller than a shoebox. And, "Mommy a shoebox is the perfect size; you just cut a slot in the top and glue on some hearts!" (Said in deplorable frustration.)

Mommy did not have a shoebox to spare nor the extra cash to buy a new pair of shoes just for the coveted box. The cereal box, briefcase-looking mailboxes on Pinterest were tantalizing, but I wanted something different.
"Why can't we cut a slot out of a bottle and glue hearts on it or make it a rocket or something?"
Stomp. Stomp. Stomp. Do you hear that? It is the sound of Jake jumping up and down on the kitchen floor in desperate refusal. "We'll talk about it later, Jake." And with that, we were off to purchase Classroom Valentines.
One box of Spongebob exchange cards later, and Jake decided said detested bottle would make an awesome Pineapple. Genius.

We cut a slit in the middle of the bottle to represent a window, cut wavy, one-inch strips from brown paper lunch sacks, and covered it with glitter. Then, Jake took a toilet tube, cut green leaves from construction paper, glued them to the tube, and stuck it on top of the bottle. Foamy stickers spell his name just above the window and a construction paper heart glued to the end of a straw decorates Spongebob's house for the Valentine holiday.Recommended Reading:
